Okonomiyaki Recipe
Okonomiyaki is a Japanese traditional cuisine is similar to pancakes, with a very varied content. The name was derived from the word “okonomi” which means “what you like” or “what you want”, and yaki means “grilled” or “cooked” (cf. yakitori and yakisoba). Okonomiyaki is usually served with tonkatsu sauce.
Okonomiyaki Ingredients :
- Potatoes, 300 grams, peel, bake until cooked, puree
- The squid, 75 grams, clean the skin, roughly chopped
- Peeled shrimp, 75 grams, roughly chopped
- Chinese cabbage, 75 grams, roughly chopped
- Cake flour, 50 grams
- Chicken eggs, 1 item
- Grated ginger, 1 teaspoon
- Salt, to taste
- Sesame oil, 1 teaspoon
- Margarine, 25 grams
- Mayonnaise, 30 grams
Tonkatsu Sauce:
- Fish broth, 125 ml
- British Sauce, 75 grams
- Sugar, 60 grams
- Mirin, 30 ml
- Grated ginger, 1 tablespoon
- Garlic, 1 tablespoon
How to make Okonomiyaki :
- Sauce: Mix all sauce ingredients in saucepan and cook until boiling. Remove and set aside.
- Combine squid, shrimp, Chinese cabbage, potatoes, flour, eggs, salt, grated ginger and sesame oil. Mix well.
- Print dough round shape with diameter of 7 cm. Heat the margarine on top of omelet pan, bake until browned. Lift. Set on a serving dish, pour the sauce and mayonnaise. Serve.
