Fried Duck Balinese Food Recipes

If you do not have time to taste the delicious island of the gods for a typical fried duck island, just try making your own Balinese fried duck this. Crispy duck tender, especially when eaten warm with the sauce and “urap matah” spicy vegetables and savory!

Fried Duck Ingredients :

  • 1 tail (900 g) duck, cut into 4 parts
  • 4 tablespoons vegetable oil
  • 2 bay leaves
  • 2 lime leaves
  • 1 stalk lemongrass, crushed

Spices, puree :

  • 2 cm fresh ginger
  • 2 cm kencur
  • 2 cm galangal
  • 8 cloves garlic
  • 1 teaspoon shrimp paste fried
  • 1 / 2 tsp coriander
  • 1 teaspoon pepper
  • 1 tsp sugar
  • 2 tsp salt

Complement :

  • Sambal Matah
  • Urap Yardlong

How to make Fried Duck Balinese :

  1. Subtle spice duck with stir until blended.
  2. Let it stand for several hours.
  3. Heat the oil, put marinated duck, bay leaves, lime leaves and lemongrass.
  4. Stir until the duck stiff and discolored.
  5. Pour the water, and cook over low heat until tender duck meat.
  6. Remove, let cool.
  7. Heat oil over medium heat lot.
  8. Fry until the duck dry. Remove and drain.
  9. Serve with Sambal Long Bean Matah and Urap.

For 4 people

Sambal Matah Ingredients :

  • 3 tablespoons vegetable oil
  • 1 teaspoon shrimp paste
  • 3 grains of red onion, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 3 pieces of red chili, finely sliced
  • 2 kaffir lime leaves, finely sliced
  • 1 stalk lemongrass, white part, thinly sliced
  • 1 / 2 teaspoon salt
  • 1 para limes, grab water

How to make Sambal Matah :

  1. Heat oil, fry the paste until fragrant. Lift.
  2. Stir in other ingredients until blended.
  3. Give the lemon juice and stir well.
  4. Serve.

For 8 people

    hi from greece
    before time i come in the bali and eat in menega cafe (jimparan)lobster cook in coconuts flame and Grilled King Prawns with a nice sauce dark-red color very taste
    you have this recipe for the sauce because is dificult to come again in bali
